Handy Tips for Fussy Eaters #2

A quick pancake/pikelet recipe for you… it’s one I make all the time. The boys love to help with the mixture, and they don’t even question the little bowl of orange squishy stuff mummy quietly puts in when nobody is paying too much attention…

  • 1.5 cups milk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups self-raising flour
  • 1/4 tspn bicarb soda
  • 1/3 cup caster sugar
  • 2-3 tbspn of any white or orange pureed vegetable

Whisk milk, egg and vanilla together in a jug. Sift flour and bicarb soda into a bowl. Make a well in the centre. Add milk mixture. Whisk until just combined.

Heat your frying pan, spray with non-stick oil. Using 1/4 cup mixture per pancake (less for pikelets), cook for a few minutes or until bubbles appear on the surface. Flip and cook for another few minutes or until cooked through. Yummo!

*I usually have some white bean or pumpkin and sweet potato puree on hand in little batches in the freezer. This makes it super easy to defrost and slide into the mixture whenever you fancy a little cook-up. Karen x
